Amazing Beef Stroganoff

The most amazing Beef Stroganoff you will ever have! Golden seared juicy beef strips smothered in an incredible sour cream mushroom gravy, this Beef Stroganoff recipe is an easy 30 minute recipe.

Ingredients
  • 600 g / 1.2 lb scotch fillet steak (boneless ribeye) (Note 1)
  • 2 tbsp vegetable oil , divided
  • 1 large onion (or 2 small onions), sliced
  • 300 g / 10 oz mushrooms , sliced (not too thin)
  • 40 g / 3 tbsp butter
  • 2 tbsp flour (Note 2)
  • 2 cups / 500 ml beef broth , preferably salt reduced
  • 1 tbsp Dijon mustard
  • 150 ml / 2/3 cup sour cream
  • Salt and pepper

SERVING:
  • 250 - 300 g / 8 - 10 oz pasta or egg noodles of choice (Note 3)
  • Chopped chives , for garnish (optional)

Instructions
  1. Use your fist (or rolling pin or mallet) to flatten the steaks to about 3/4cm / 1/3" thick. Slice into 5mm / 1/5" strips (cut long ones in half), discarding excess fat.
  2. Sprinkle with a pinch of salt and pepper.
  3. Heat 1 tbsp oil in a large skillet over high heat. Scatter half the beef in the skillet, QUICKLY spread it with tongs. Leave untouched for 30 seconds until browned. Turn beef quickly (as best you can!). Leave untouched for 30 seconds to brown. Immediately remove onto a plate. Don't worry about pink bits and that it will be raw inside.
  4. Add remaining 1 tbsp oil and repeat with remaining beef.
  5. Turn heat down to medium high. Add butter, melt. Then add onions, cook for 1 minute, then add mushrooms.
  6. Cook mushrooms until golden. Scrape bottom of fry pan to get all the golden bits off (this is flavour!).
  7. Add flour, cook, stirring, for 1 minute.
  8. Add half the broth while stirring. Once incorporated, add remaining broth.
  9. Stir, then add sour cream and mustard. Stir until incorporated (don't worry if it looks split, sour cream will "melt" as it heats).
  10. Bring to simmer ,then reduce heat to medium low. Once it thickens to the consistency of pouring cream (3 - 5 minutes), adjust salt and pepper to taste.
  11. Add beef back in (including plate juices). Simmer for 1 minute, then remove from stove immediately. (Note 4)
  12. Serve over pasta or egg noodles, sprinkled with chives if desired.

Recipe Notes:

#Best cut of beef for stroganoff - use decent to good quality quick cooking cut of beef such as:
  • boneless rib eye (aka scotch fillet)
  • boneless sirloin, sirloin steak tips
  • beef tenderloin
I don't recommend: beef round steak (aka topside), skirt, flat iron, hanger.
Pork can also be used - pork stroganoff is found in Russia too.
Flour - any is fine here, I use plain white flour (all purpose). Or use 1 tbsp cornstarch / cornflour (for Gluten free stroganoff sauce)
#Serving - I like serving this with short pastas, rather than long pastas. Easier to eat. It's also great with mashed potato, rice, polenta - anything that's suitable to slop up all that gravy!
#Sauce thickness: You can make sauce thinner with touch of water if you want, but DO NOT keep simmering to thicken once the beef is added, it will overcook the beef.
#Storage - 3 to 4 days in the fridge, also freezes fine. Thaw fully then reheat carefully, being sure not to overcook the beef!

The house is consists of four bed room that located deep inside the house. Those four bedrooms are confronting one another.

Main bedroom that have king size bed with two single sofas, a television, dressing room which have a cupboard and a dresser, then a bathroom. This room is supposed belongs to the owner.

Second main bedroom is almost the same with main bedroom but it’s a bit smaller. Consists of a king size bedroom with a television, there is one bench, a small dressing room with cupboard and a bathroom. This room maybe for their child.

Regular bedroom with bathroom consists of king size bed with the television, cupboard and bathroom. This room can be as the guest bedroom.

Regular bedroom without bathroom, this one have the same size with the current type. But there is no bathroom. So you should use the bathroom outside the bedroom. This room maybe as the maid room.

Living room

The living room of this house placed in the right side after main door. The size of this living room is very big. We can see that two big sofas set can be put there. The firs one is sofa set letter L and the second one is sofas set consists of three setter sofa and single sofas. The living room was designed to be at one with the family room. Big size of living room has benefits when there is family party or meeting.

Kitchen

Besides the living room, there are kitchen and dining room. The dining room has no block with the living room, but the kitchen had separate room. The dining room designed with whole glass window, so when you stay there you can see the outside and as the source of sun shine. The idea of kitchen have different room is great, because people in the living room will not see cooking activities and the smell will not spread out. Inside the kitchen, there is small room which is the washing room. You can put the washing machine there.

Terrace

Another important place is terrace. Why? This place is the place to get relax, the place for chit chat or just to looking at the environment. From the design, the terrace placed after the bedroom and also dining room. The big window of the dining room and bed room is going to the terrace.

Overall, this 4 bedroom house plan is complete enough. But maybe just for suggestion, you can use another living room can be the work room or makes the second floor. In the second floor just put 2 bedroom, family room, balcony, work room. Then in the first floor, you can maximize the dining room and terrace will be bigger or add Small Park.

  1. This recipe is great. I don't often leave reviews for recipes, but wanted to for this. We had some left over beef roast that we honestly accidentally overcooked the night before. This was our chance to salvage it. We skipped all the steps that involved meat searing since we were working with cooked beef, and instead added thinly sliced beef at the end. The gravy was delicious, and this recipe certainly saved us from an almost inedible beef roast! We'll make this again for sure.
