Special Yum Yum Squash Casserole

In this recipe, you will need only a few simple ingredients to make a delicious and nutritious dish. In a large skillet over medium-high heat, melt butter. Add onion to the melted butter in the skillet and cook for 5 minutes, or until tender. Add yellow summer squash, salt, and pepper. Cook until the squash is tender. Drain well.

Ingredients:

  • 2 Tbsp butter
  • 1 small onion, chopped
  • 2 lb yellow squash, sliced
  • ¼ tsp salt, or to taste
  • ¼ tsp pepper, or to taste
  • 1 (10.5-oz) can cream of chicken soup, undiluted
  • 1 cup sour cream
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • 1½ cups shredded cheddar cheese
  • 1 (6-oz) box Stove Top stuffing mix
  • 1 cup chicken broth

How to Make Yum Yum Squash Casserole

  1. Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
  2. In a large skillet over medium-high heat, melt butter. Add onion to the melted butter in the skillet and cook for 5 minutes, or until tender. Add yellow summer squash, salt, and pepper. Cook until the squash is tender. Drain well.
  3. In a large bowl, mix together squash mixture, cream of chicken soup, sour cream, onion powder, garlic powder, and white cheddar cheese. Spread into prepared pan.
  4. Sprinkle the uncooked stuffing mix on top of casserole. Pour chicken broth evenly over the stuffing mix.
  5. Bake for 30 to 40 minutes.
